Gluten sensitivity impacts a large number of people. According to the Wall Street Journal, experts believe that as many as 1 in 20 Americans may have some form of it. Gluten allergies inhibit the absorption of wheat products by the intestines, resulting in bloating and abdominal pain. Persons with gluten sensitivity can also develop celiac disease, which is characterized by damage to the lining of the intestines and symptoms that include nausea, diarrhea, depression, fatigue, hairloss and muscle pain. The Journal states that the disease affects at least 1 in 133 Americans.
